- Onions(chopped finely) : 1 pc
- Ginger (ground to a paste) : 1 tbsp
- Orange rind (grated) : 1 tbsp
- Skimmed milk : 250 ml
- Coriander leaves : 1 tbsp
- Olive oil : 1 tbsp
- Chicken stock (optional) : 500 ml
- Green chilly paste : 1/2 tbsp
- Black pepper : to taste
- Salt : to taste

Heat the olive oil in a pan and fry the onions lightly.
Then add the carrots and fry for two-three minutes more.
Add all the ingredients mentioned above and bring to a boil, covered.
Uncover and let simmer on a low flame for 20-25 minutes until the carrots are tender.
Blend the soup until smooth in a liquidizer. Reheat and serve garnish with coriander leaves.
Here the delicious and healthy soup is ready.
